Tasting Notes

A boutique, 149 bottle release, exclusive to Bruny Island House of Whisky.

This release was made in collaboration with Derwent Distillery, an exquisite producer situated beside beside the river in the Derwent Valley 

Nose: An initial note of Vanilla and savory hints, opening into caramelized banana

Palate: Smooth and sweet, candies and caramel which develops towards dried apricots with complex spice. 

Finish: Dark chocolate, syrupy raisins and a nutty note of raw almond scattered across vanilla custard.

Initially, the American Oak, ex bourbon casks used in this release were treated with a tawny Mariposa technique. Then, on the winter solstice, we filled them with premium Seppeltsfield Grand Topaque to additionally season for a full year before decanting and filling with exquisite new-make from Derwent Distillery.  The result is a balanced and nuanced release that retains surprisingly rich complexity at the approachable 41% ABV mark.
